Clams are increasingly being seen on restaurant menus in New Zealand and are also very easy to cook with at home. They tend to be firm-textured and salty, with meat that ranges from white to yellow in colour. Littleneck Clams are firm-textured with a savoury flavour, while the distinctive ridged-shell Diamond Shell Clams have plumper flesh and are slightly sweeter in flavour. You may also come across Surf Clams, rounded yellow-shelled Moon Shell Clams and Storm Clams.
Strictly speaking, clams are actually cockles – in New Zealand, clam is the generic term for any bivalve, including tuatua, mussels and pipi.
